It’s avocado season in California and I am so lucky because my sister has 3 avocado trees on her property. She is very generous with them too; she lets us pick a bunch when we hang out. These avocados are the best- they’re smooth and creamy like an avocado butter. Around this time of year we start adding avocado to many of our meals and have a pretty steady supply of guacamole in the fridge.

Guacamole
2 ripe Avocados
1/4 c. Onion, chopped
1/2 c. Tomato, chopped (optional)
1 tsp Garlic Powder
1 Garlic clove, crushed (or 1/2 tsp crushed garlic, canned)
1-2 Tsp Lemon juice
1/4 tsp Salt (optional)
Directions:
1. Scoop avocados from peel and mash in a bowl.
2. Add rest of ingredients and mix well.
Enjoy with chips or fresh veggies, or in a burrito, burger, tofu scramble, wrap, or atop a vegan pizza!
