I usually do not use tofu products, since I try to stick with eating whole foods that have not been processed. But this frosting is so scrumptious, I thought I’d share it for people who are looking for a great vegan cream cheese frosting, but aren’t necessarily looking for one that is raw. I decided to use this recipe on my carrot cake for my husband’s birthday. We eat mostly raw, and usually don’t go all out on a cooked meal, but for his birthday we decided to make some exceptions. I started the day off by making him my banana pancakes. Mmm! After a nice hike, we went out to eat some tasty vegan cuisine, and came home to enjoy this bountiful dessert. He was happy. 🙂
