Sweet Potato-Carrot Curry Soup
2 Tbsp Oil (for grilling)
2 Sweet Potatoes, peeled
2 Large Carrots
1 large Onion
3 cloves garlic
3 c. Water or low-sodium Veggie broth
1 1/4 c. Coconut Milk
1″ knob of fresh Ginger or 1/2 tsp ginger powder
2 Tbsp Curry
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4+ Salt- may need to omit if using veggie broth with sodium.
Pepper, to taste
1. Pour 2 Tbsp Oil into a large pot over medium heat. Add chopped carrots, potatoes, garlic, and onions.
2. Cover pot, stirring mixture occasionally, until vegetables have soften.
3. Puree mixture with water and fresh ginger in a blender (I use my Vitamix) or immersion hand blender.
4. Add Coconut milk and other ingredients to blender.
Serve warm. Enjoy!
